Usually I will marinate the fish in salt, turmeric and chili powder about 30 minute before I start cooking to give it a tastier flavor inside the fish then I'll deep-fry the fish before putting it into the ready masala. It tastes pretty good without frying it first if you prefer less oily.
Stirring continuously the masala when you're adding the yogurt is worth a concern, this to avoid whitish mixture above the gravy later on so making sure it's blended well with masala during this process it's important.
So, here is the recipe of this delicious fish curry
Ingredients:
1. 500 grams blue cod fillet (feel free to substitute with different kind of fish)
2. 3 ripe tomatoes
3. thumb size of ginger
4. 2 cloves of garlic
5. 2 fresh chili pedi
6. 1/2 tsp turmeric
7. 1 1/2 coriander powder
8. 1-2 tsp chili powder (adjust to your liking)
9. 3-4 tbsp greek yogurt
10. salt to taste
11. sugar to taste
12. 1 tsp black mustard seed
13. 1 stalk of curry leaf
14. 2 tbsp mustard oil
15. 2 cups of water
Method:
1. Grind the tomatoes, ginger, garlic and chili pad to make a smooth paste
2. Heat the oil and fry the paste for a minute then add turmeric, coriander and chili powder. cook in low heat till oil separated (see tips above)
3. Add yogurt while keep stirring, add water. let boil for about 10 minutes
4. Add sugar and salt, adjust the taste then add the fish, simmer till the fish is well cooked
5. meanwhile in another wok, heat oil and fry the mustard seed and curry leaves
6. serve curry in a serving bowl and garnish with fried mustard and curry leaves.
